Doubling tips
- Don't double baking powder, baking soda, or salt exactly — use about 1¾× and adjust.
- Doubled batter in one pan bakes much longer; two pans of the original size is safer.
- Spices and vanilla: start at 1½× when doubling, then taste. They intensify more than you expect.
